Ingredients for making Carrot Pot Cake:

For the carrot cake:

 4 cups of wheat flour (560 grams)

 3 cups of sugar (480 grams)

 ½ cup of oil (120 milliliters)

 2 large carrots

 3 eggs

 1 tablespoon of baking powder

For the brigadeiro filling:

 3 cans of condensed milk

 12 tablespoons of cocoa or chocolate powder

 ½ box of sour cream

How to Make Carrot Pot Cake:

Start by blending the eggs, oil and coarsely chopped carrots in a blender.

Tip: The quantities indicated in this recipe yield about 10 250 ml pots.

In a bowl mix the flour and sugar. Add the ingredients from a blender and mix well until you get a lump-free cake batter. Add yeast and mix a little, just to incorporate.

Pour the carrot cake dough into a greased and floured rectangular pan or, if you prefer, bake it on a greased and floured cupcake tray (this option is valid for those who do not have a round cutter). Bake in a preheated oven at 180ºC for about 40 minutes.

While the cake bakes, prepare the brigadeiro filling: place the ingredients in a pan, bring to medium heat and keep stirring until it thickens (in a brigadeiro point). Turn off the heat and let cool.

To assemble the carrot pot cake, simply place alternating layers of cake discs and brigadeiro cream in the pot. Finish with brigadeiro and decorate with chocolate confectionery, ground almonds or another option. Try it out and let us know what your customers think!
